Just so you guys and gals don't think I haven't been busy. LOL
Here is a new recipe I came up with that was a HIT!
I will definitely, according to the family, be making this again.
Chicken Breast Saute'
6 Chicken Breast
5 Strips of hickory smocked bacon (diced)
1 Large yellow onion (diced
2 TBSP Minced or chopped Garlic
4 TBSP Butter
2 Cups sliced mushroom
1/2 Cup Sour Cream
1/2 Cup Cream Cheese
1 Cup of Heavy Cream
2 Cups Chicken Stock
1 TBSP Chicken Boullion
1 Cup Parmesan Cheese (shredded) Grated works as well.
Salt and Pepper
Brown bacon in large frying pan until slightly crispy. Remove to a bowl and save.
Place chicken breasts in pan on med/high heat.
Season with salt and pepper.
Cook on each side until golden brown. Turning as needed.
Remove chicken to a plate and save.
To the frying pan add diced onion and garlic. saute' until onions are slightly brown.
Add butter to pan and melt.
Add in Chicken Stock, Cream Cheese, Sour Cream, Heavy Cream, Bacon, Parmesan Cheese and chicken bouillon.
Whisk until blended and sauce is smooth.
Add Chicken back to pan and simmer uncovered until chicken is cooked through.
Serve with rice or noodles.
We had it with Greek Rice and fresh green beans. Like I said earlier, it was a big hit.
